From 2014-2017, Cooking Today was a 22-minute demonstration-style television show on Northwest Arkansas' NBC affiliate KNWA. There were two different hosts over four seasons and hundreds of episodes! This RUclips channel is where we share those seasons and recipes with you.
SIGNATURE SHRIMP AND GRITS
SIGNATURE SHRIMP AND GRITS
Serves about 6
-for the shrimp-
1 Tablespoon butter
1 teaspoon olive oil
1 ½ lbs. large fresh or frozen shrimp {thawed} with tails on
6 slices of thick-cut hickory bacon, cut into pieces
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 yellow onion, chopped
2 cloves garlic, chopped
1 ½ Tablespoons of Creole seasoning, like Tony Chachere's
½ cup dry white wine
1 ½ cups unsalted chicken stock
the juice of one lemon
2-3 Tablespoons chopped scallions, green parts only

12 oz. Mild Mexican Velveeta, cubed
½ teaspoon salt
1 cup uncooked instant grits
2 cups of unsalted chicken stock
2 cups of milk
¼ cup butter
1 teaspoon garlic powder

You are using way too much mayo!!!!! You should use 8oz of cream cheese and only about 1/3 cup mayo and 1 teaspoon wostetshire sauce.

What about if you get them frozen
FYI - To have the homemade parchment muffin liners stand on there own before filling. Use the bottom (turn upside down) of the muffin tin to make your mold and shape the parchment paper around the bottom. Then put in the muffin tin and fill. Enjoy!!🙂
